Is it dangerous? The honest answer

Two separate questions get mashed together here, so take them one at a time.

Did eating a flake hurt me?Almost certainly not. PTFE and the ceramic sol-gel layers used in air-fryer baskets are both chemically inert solids at eating temperature. They are not absorbed and they are not metabolised; a fragment passes through the digestive tract unchanged. The FDA's published position on fluorinated compounds in food contact treats intact nonstick cookware as not a dietary exposure concern, and a detached particle is a mechanical nuisance rather than a chemical one. We are reporting the regulator's position, not running our own toxicology.

Should I keep cooking on it? No, and the reasons are practical. A coating that has started to lift keeps lifting — the damaged edge is where the next flake comes from. Underneath is bare aluminum, which food sticks to aggressively at 400°F, so the basket stops working as a basket. And the one genuine chemical caution in this area is about overheating, not scratching: fluoropolymers begin to break down at high temperatures well above normal air-frying, which is why running an empty basket on max heat is on the list of things not to do below.

The five things that destroy a basket coating

A coating is a thin layer, measured in microns. These are the five ways it goes, roughly in order of how often we see them cited in maker care instructions.

  • Metal utensils. Tongs, forks and metal spatulas on a coated basket. This is the single most common cause and the easiest to fix: silicone or wood only.
  • Aerosol cooking spray. The propellants and lecithin in spray-can oils polymerise into a sticky varnish that bonds to the coating, and the only way to remove it is scrubbing — which takes the coating with it. Use a brush and a bottle of oil instead. This is the cause most people never suspect.
  • Abrasive cleaning. Steel wool, scouring powder, the rough side of a sponge, or a dishwasher tablet left sitting against the surface. Soak instead; a coated basket gives up almost anything after twenty minutes in warm water.
  • Repeated dishwasher cycles.Most baskets here are rated dishwasher-safe — Ninja, Cosori and Typhur all state it — but dishwasher detergent is alkaline and abrasive by design, and "safe" means it survives the cycle, not that the cycle is kind to it. Hand-washing visibly extends coating life.
  • Running it empty on high. An empty basket at max temperature gets far hotter than one with food in it, because there is nothing absorbing the heat. This is the condition under which fluoropolymers actually degrade. Preheat with the food in, or not at all.

Replace the basket, or the machine?

Check the basket first — on most basket machines it is a separate part and several makers sell replacements. That is the cheap answer and it is worth ten minutes of searching before you spend anything, especially on a machine under two years old whose warranty may still apply. Warranty terms on the machines we track run from no published term at all up to a published three years, and a worn coating is normally treated as wear rather than a defect, so do not count on a claim.

Replace the machine instead when any of these is true: the basket is not sold separately, the replacement costs a meaningful fraction of a new machine, the fryer is old enough that you were due anyway, or the coating failed within months of normal careful use — which suggests a thin coating rather than bad habits. What to look for if you are replacing

If a failed coating is what brought you here, the useful move is to buy a surface that cannot fail the same way. Three things to check on the listing, in order:

  • Is there a coating at all? Glass is the only format in this category with no surface layer. There is nothing to scratch, nothing to flake and nothing to wear out.

What not to do

  • Do not sand, scrape or strip the rest of the coating off to even it up. You end up with bare scratched aluminum, which is a worse cooking surface than a worn coating and much harder to clean.
  • Do not line the basket with aluminum foil as a permanent fix. Foil blocks the perforations the machine needs for airflow, which is the whole mechanism — and makers generally advise against covering the basket base.   • Do not repaint or re-coat it. There is no consumer product that reapplies a factory sol-gel or fluoropolymer layer, and nothing you spray on a basket is rated for 400°F food contact.
  • Do not assume the warranty covers it. Coating wear is usually classed as wear. Check, but plan on paying.
